Most years, I wait for the .1 update to the new macOS and iOS, but jump right to the newest iPad OS. That’s my current plan for the 27 updates but I am interested in the WatchOS update which nudges me to the iOS update sooner. Now that I use a Mac mini as my main machine and a M2 MacBook Pro, I can take the macOs 27 plunge.
